Almond Biscotti

This is a classic, all butter Almond Biscotti recipe that is easy to make. These simple, crunchy Italian cookies are totally munchable and dunkable.

– butter – granulated sugar – eggs – vanilla extract – all purpose flour – salt – baking powder – almonds

In a medium bowl, combine the butter and sugar until light and fully incorporated. Mix the vanilla & eggs. Add the flour, salt and baking powder. Stop mixing once all the flour is absorbed.

Mix in the chopped almonds. Once the mixture comes together, dump out the bowl onto the tray and gently form the dough into a log.

Press down the dough log to about half inch thick. Mix the egg and water, brush the top of the dough. Bake for until puffy, golden brown and firm.

Once done baking, remove from the oven and set aside. Drop the oven temp. Allow to cool on the tray. Slice the log into about an inch.

Place the cookies on their flat sides and bake for at least 10 minutes. After the cookies are done baking on one side, flip and bake again.
