Butter Pecan Ice Cream Sandwiches

Melt the butter in a small saucepan over medium heat once it turned to golden brown color remove from heat and transfer to a bowl to cool.

While the butter is cooling, coarsely chop the pecans and place in a small bowl. Set aside. In the bowl of the butter, mix the sugars.

Add eggs and vanilla extract. In a separate bowl, sift the dry ingredients. Combine the dry ingredients with the butter mixture.

As you're mixing toss in the chopped pecans. Scoop the dough onto the parchment lined tray and bake.

Once finished baking, remove from the oven and let the cookies set for a few minutes. Let it cool completely before assembling with ice cream.
